Italian School Of Cooking

Not only is the Italian School of Cooking the biggest marketing scam, but the food & culinary skills are horrific! For starters, the chefs demonstrated how to butterfly raw chicken breast on a wooden cutting board. Anyone who has ever worked with chicken knows it is completely unsanitary to use a wooden cutting board with raw chicken, as you can never fully clean the board without ruining the integrity of the wood. And this guy runs a restaurant?? The chef went on by saying Italian cooking is all about using the best and freshest ingredients. At which point he began to stuff the chicken breast with frozen spinach and PROCESSED AMERICAN cheese!! You have to be kidding! When asked what tomato sauce he would recommend, the chef cleverly replied he would only use the one he is using - the one his store personally imports from Italy and would be happy to sell to you. When asked whether an alternative could be used he seemed offended and asked, "But why would you, when this is clearly the best?" The same was true for the olives, the capers, & the wine - all exclusively available in their gourmet store or to be served in their new wine bar opening soon in Ranelagh. At one point, the sous chef shamelessly promoted their restaurant by dancing around and shouting "The best!" while display the business card from the restaurant. This was the same sous chef who nearly chopped off her finger, not once but twice, while trying to dice an onion. I've seen a child with better hand-eye coordination.

The first entree was so soaked in butter and devoid of any seasoning that neither my girlfriend nor I could stomach a second bite. Here's a hint: if the pan is not hot enough, the food will not fry & become light/crisp; it will only steam & soak up all the butter. The second was so incredibly salty that none of the people around us could eat it either. Although we were given entire breasts of inedible chicken & turkey to sample, when it came to the salmon & cod they gave out only bite sized portions. Which is a shame, since those were the only dishes worthy of eating. However, one wonders why they even bothered with the Salmon when they didn't give it the necessary 1-2 hours of marinade time required and thus, it demonstrated none of the flavors they so proudly claimed.

To top it off, the night ended with some strange serenade of Italian songs, more Pinocchio endorsements, and the unnerving sound of 20 or so people banging on pre-school musical instruments. I will admit the wine was great & I did join in the sing-a-long. But you have to ask yourself if this is really a cooking school or a means to promote their numerous business ventures.
